I set up Bistro26 in February 2007 with the vision to create a place where I’d like to go to eat and relax with a bottle of wine. I started working for the De Vere group following my training, then moved back to Lancashire. In the next ten years I learnt my trade at restaurants including Elliots, the Folly and the award winning gastro pub, the Bayhorse in Forton. I was privileged to work under Brain Mellor (English Olympic cookery team member) and John Benson-Smith (consultant to Manchester City football club) who inspired me to get the best out of the produce. In 2001 I became executive chef for the award winning Waterwitch pub and restaurant. Currently I am influenced by Michael Caines, Antony Demetre, Gordon Ramsey and Galton Blackiston who create perfection on a plate. (www.bistro26.co.uk )

Smelly Apeth

Mark has been at Churchmouse trying new cheeses including the award winning Smelly Apeth from Saddleworth cheeses (Sean Wilson who played Martin Platt in Corrie). From soap to cheese. Mark is not discussing the Rovers score!!!
